Ingredients:
- 4 scallions chopped
- 1/3 cup low fat buttermilk
- 1lb Yukon Gold potatoes cut into 1.5" cubes (you can also peal the potatoes beforehand if so desired)
Directions:
- Put cut potatoes into a pot of boiling water and cook till tender. 15-18 minutes.
- Mix boiled potatoes with buttermilk and mash to desired consistency. Stir in chopped scallions.
Serving size = 1/2 cup , 3 Weight Watcher Points+
