Buttermilk-Scallion Mashed Potatoes

Comfort food and still waistline friendly! If you love scallions and potatoes then you will love this side dish. You could easily reduce the amount of scallions and still have a delicious side dish if you wanted to.

  • 4 scallions chopped
  • 1/3 cup low fat buttermilk
  • 1lb Yukon Gold potatoes cut into 1.5" cubes (you can also peal the potatoes beforehand if so desired)

  1. Put cut potatoes into a pot of boiling water and cook till tender. 15-18 minutes.
  2. Mix boiled potatoes with buttermilk and mash to desired consistency. Stir in chopped scallions.
