Beef Tenderloin

This was a hit as the main meal for our Valentines Day Dinner Party. To ensure freshness we went the morning of the party to Central Market to pick up the meat. They were also kind enough to trim and tie the meat as directed in the recipe. Gotta love great service.

Ingredients:
  • 4-6 lb of beef, trimmed and tied
  • 2 tablespoons of olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
Directions:
  1. Heat oven to 450 degrees, rub beef with oil.
  2. Sprinkle beef with salt and pepper 
  3. Place empty roasting pan in over for 5 minutes
  4. Remove pan and reduce oven temperature to 400 degrees.
  5. Place beef in pan.
  6. Roast till thermometer inserted in thickest part of meat reads 135 degrees for medium rare. (30-40 minutes)
  7. Remove from oven and cover loosely with foil and let rest for 15 minutes.
  8. Remove strings and slice.

  3. @Channa, If I have the nutritional information or points+ value I will always post it. Unfortunately this recipe is from a cookbook that doesn't have nutrition information. We will have to call it an "indulgence" :)
